Process description
Edible oil production is usually produced by pressing and extracting seeds and fruits.
Oil that is extracted only by pressing without heating is called cold-pressed oil. This type of oil cannot be refined. It can be used directly after filtering and packaging.
However, the higher the temperature, the higher the oil yield. This leads to the need for additional heating during the pressing process. The process with a temperature higher than 100°C is called “hot pressing”. Crude oil extracted using this method must be refined.
Refining is a combination of physical and chemical methods to remove undesirable and environmentally related components in crude oil, such as:
Phospholipids
Free fatty acids
Pigment
Odor and fragrance ingredients
Wax
Heavy metal
Pesticides
from the raw oil.
A typical refinement basically consists of the following steps:
Lecithin removal
Degumming
Deacidification or neutralization
Bleaching
Deodorant
In addition to these typical chemical refining, physical refining is also very important. The technique of this method is more complicated. But the treatment process consists of only two steps, namely the degumming process and the pre-bleaching or deacidification process.
The advantage of this method is the small impact on the environment and the small loss during the refining process. The disadvantage is that the degumming process needs to be greatly improved according to the type of oil.

Delecithin
A special degumming method is used to extract lecithin.
The delecithin stream is dedicated to the production of special types of edible oil, such as soybean oil, and it is profitable to use this process.
Degumming
The hydrated phospholipids are precipitated by adding water and heating, and formic acid is added to the remaining unhydrated phospholipids to decompose. Phosphoric acid and citric acid are the preferred additives. By heating to 90°C. Protein and carbohydrate components can break down oils. Gum is completely coagulated and separated.
Deacidification
By adding sodium hydroxide, fatty acids are removed. Fatty acids can affect taste and shelf life. The final fatty acid salt is absorbed and removed by a centrifuge.
bleach
In this step, the pigment is removed along with the hydroperoxide and heavy metals.
Deodorization (distillation)
The temperature of the whole process is the highest at this step, and the temperature is about 240°C. Bad and undesirable odors are removed. Volatile components (including hexane residues) and pesticides are also removed together.
